Apple Pancakes

Ingredients

  • 0.50 cup Salsa
  • 0.67 cup Low-fat sour cream
  • 1.00 each Onion, cut in strips
  • 1.00 each Sweet green pepper, chopped
  • 0.25 teaspoon Pepper
  • 1.00 tablespoon Vegetable oil
  • 1.00 each Sweet red pepper, chopped
  • 0.25 teaspoon Salt
  • 2.00 each Garlic cloves, minced
  • 1.00 small Zucchini, thinly sliced
  • 1.00 lb Lean ground beef
  • 2.00 teaspoon Dijon mustard
  • 4.00 each 10-inch flour tortillas
  • 1.00 tablespoon Chili powder


Beat Bisquick, cinnamon, egg and milk until smooth. Fold in grated apple. Pour batter from 1/4-cup measuring cup onto hot griddle.


Bake until bubbles appear. Turn and bake other side until golden brown.


Makes about 18 pancakes. Pass Cider Syrup or other syrup of choice.


For cider syrup: Mix sugar, cornstarch and spice in saucepan. Stir in cider and juice. Cook, stirring constantly, until mixture thickens and boils 1 minute. Remove from heat and blend in butter.
